There are two sizes of these French-made saucier pans (also known as Sauteuse Evasée or Chef's Pans) available:
* A medium-sized one with a 2.1 quart capacity that has a 7-7/8 inch / 20 cm diameter at top; a 12.4 cm diameter at bottom; and sits 7.7 cm high (without the optional lid). It has a single, all-metal handle.
* A larger 3.4 quart capacity Chef's Pan with a 9.5" / 23.8 cm inside diameter at the very top; a 16.2 cm diameter bottom; and is 8.8 cm high (without the optional lid). It features Italian-made handles by La Termoplastic F.B.M. (which are made of a durable insulating material), with an extra carrying handle on the other side, making it 18 inches long, altogether, including both handles.
A "Saucier" isn't just the type of chef who prepares sauces, stocks, and soups: it's also the name for a special type of saucepan ideally suited to those and related tasks (such as cooking custards or simmering thick dishes like risotto, polentaor even oatmeal), featuring a long handle; rounded (with no corners), flared, heat-conducting walls; wide mouths; and rolled lips/rims.
